Philadelphia, PALa Peg at FringeArts New Menu and Chef - La Peg at FringeArts debuted a new menu from new Executive Chef Mike Maronski. The menu builds on classic American dishes, complementing La Peg’s beloved Yankee Pot Roast and Fast Food Burger with an assortment of approachable versions of familiar, crave-able fare, perfect as a meal before a FringeArts performance or outside in their popular Haas Biergarten.

Chef Maronski joined owner Peter Woolsey’s team at La Peg in early 2019, and is excited to make his mark on the menu at the popular restaurant and bar, crafting a menu that is equally suited to intimate date nights and boisterous gatherings of friends or co-workers.

New dishes include (click for photos, all courtesy La Peg):

  • Wedge Salad with green goddess dressing, bacon, tomato and chives
  • Grilled Asparagus Caesar Salad with grilled and shaved asparagus, brown butter croutons, house-made Caesar dressing and shaved Parmesan
  • Mussels with Thai lemongrass-coconut broth or tomato-shallot-Calabrian chili sauce
  • Crab Cakes with smoky romesco sauce and pea tendrils
  • Oysters on the Half Shell, served with meyer lemon mignonette and blood orange granita
  • Tuna Tartare with miso mayonnaise, avocado, bitter greens and sesame vinaigrette
  • House-Made Pappardelle and Meat Sauce with veal, pork and beef ragu, tomato, basil and house-made ricotta
  • Seared Scallops with leeks, marble potatoes, grapefruit sauce and hazelnut-lemon gremolata


Chef Maronski has also reimagined the La Peg bar menu, adding Chicken Confit Sliders with tomato, cucumber, watercress and house-made chips and an instant-classic Grilled Cheese with Cabot cloth-bound cheddar and Raclette cheeses, a Parmesan crust and house-made chips. The bar will also feature two varieties of Chicken Wings daily, such as Classic Buffalo or Garlic-Parmesan, perfect with their generous Happy Hour specials, including $3 beer and wine and a rotating $5 cocktail, Monday through Friday from 5 p.m. until 7 p.m.

“As we head into the summer months, we’re so excited to serve Chef Mike’s new menu of reimagined American classics,” says owner Peter Woolsey. “These are the flavors that we all know and love, elevated with top-notch ingredients and thoughtful techniques. After all, a Grilled Cheese is good, but a Parmesan-crusted Grilled Cheese? That’s great.”

Chef Maronski comes to La Peg from three years at sister restaurant Bistrot La Minette, where he worked his way up from line cook to sous chef. He is a lifelong Philadelphian and a graduate of the Community College of Philadelphia, where he earned a degree in Culinary Arts. He currently resides in the city’s Whitman neighborhood.
