Philadelphia, PA – Bolo Latin American dining room & rum bar, the newest addition to Rittenhouse Square, is proud to announce the debut of its Sunday Roast Lechon Tasting Menu. This extravagant culinary experience will be available weekly from 4 pm - 9 pm and features a whole roasted pig served with traditional and seasonal accouterments.
The three-day process of preparing the Lechon Dinner begins when the pig arrives at Bolo. Chef Fuentes and his team place the pig in a sour orange brine for 24 hours before deboning it and rubbing it with achiote, oregano, and other spices. The pig then sits overnight before being roasted on Sunday morning in preparation for dinner service.
In addition to the freshly roasted pig, Chef Fuentes has personally curated an assortment of traditional and seasonal accouterments that will rotate frequently with each week’s dinner service. These have included black cherry mojo, yuca mash, chickpeas in red sofrito, market verandas in escabeche, arroz con gandules, swiss chard callaloo, roasted heirloom corn in coconut beurre monté, as well as various vegetables and side dishes from the Bolo menu.
The new Sunday’s Roast Lechon Dinner costs $55 per person. At the same time, Bolo’s ever-evolving seasonal dinner menu is also available during dinner service on Sunday for guests looking for more variety. Additionally, those looking for a personalized selection of current menu items can enjoy the Paladares Menu, priced at $85 per person, which presents these items in a tasting menu format experience (available nightly).
