Dim Sum Garden's Sally SongPhiladelphia, PA - Sally Song of Dim Sum Garden will serve as the next Chef-in-Residency at Volver at the Kimmel Center (300 S. Broad Street).  This award-winning program underscores Chef Jose Garces' goal to help shape an inclusive cultural future in Philadelphia by supporting emerging minority chefs.


Dim Sum Garden's Sally Song Debuts as Chef in Residency at Volvér

Chef Song will host her residency between April 26 and June 3, 2023, offering customized dim sum dishes that reflect his handmade, authentic Shanghai-style dim sum cuisine. These will include Steamed Chicken Dumplings, Pork Soup Dumplings, Scallion Pancakes, Pork Noodles, Chicken Curry with Honey Walnut Shrimp, and Black Pepper Sauce Steak; additionally, during his residency, he plans on raising funds to expand Dim Sum Garden into a larger space and relocate with a new larger facility.

Dim Sum Garden and Song's journey dates back to 2003 when Song's mother, Head Chef Shizhou Da, came to America. Shizhou has over three decades of experience making fresh homemade Shanghai-style dim sum. Armed with an original recipe for Xiao Long Bao -- Chinese steamed soup dumplings -- created by her 5th-generation grandfather who first developed it.

Song was delighted at the opportunity to join Volver's lineup and eagerly accepted. Song remarked, "Chefs in Residency program is a testament to Jose's legacy in Philadelphia. I believe this program provides a great opportunity. We are extremely grateful to be selected chefs for this program and hope to use this platform to expand the presence of authentic Shanghainese cuisine here in Philadelphia. Volver celebrates this cuisine and looks forward to sharing its cuisine with a larger audience."

Song Has Designed An Exclusive Menu Just For Volver That Includes:

Small Plates: Steamed Chicken Dumplings with Crispy Shallots, Chives, Dumpling Sauce, and Chili Sauce on Small Plates for your tasting pleasure; Soup Dumplings featuring Chives, Dumpling Sauce, and Chili Sauce on Small Plates for you to sample as well; Cucumber Salad featuring Enoki Mushroom wrapped Cucumber and Dim Sum Garden Vinegar Sauce as well; Scallion Pancakes featuring Dumpling Sauce and Chili Sauce and more!



Entrees include Pork Noodles - Handmade Flour Noodles with Ground Pork Sauce and Scallions; Chicken Curry with String Beans, Onions, and Bamboo is served over Jasmine Rice, while Honey Walnut Shrimp is drizzled in honey and whiskey sauce before being placed over Jasmine Rice in their Jasmine form. Black Pepper Sauce Steak comes topped with Red Peppers, Green Peppers, Onions & Jasmine Rice to complete this wok-style cooked steak dish.

Dessert: Mango Tapioca Pudding - With Diced Mangoes, Tapioca, and Mango Milk



Hours for this season run Wednesday to Friday from 4:00 pm to 9:00 pm and on Saturday and Sunday from Noon to 9:00 pm with a pre-theatre menu from 4:00 pm to 6:30 pm; fixed price menu costs $56 per person and offers items from Volver's ongoing menu as well as items created by resident chefs.
