Chef Joe Burke, Jr., a graduate of the Restaurant School at Walnut Hill, has moved to the leadership role after many years as Kitchen Manager. He notes that his approach to his food is to use simple and fresh ingredients and “don’t mess them up.”

“It was only a matter of time,” said mom and owner Gina Burke. “Joe’s been in our kitchens since he was a little boy and, despite our suggestion that he consider another profession, he discovered a passion for cooking that can’t be denied. His dad and I could not be prouder and we know that our loyal customers will feel the same. We look forward to the new excitement he’ll bring to the menu.”

Joe, Jr. is one of a score of millennials taking the head chef role and making names for themselves in restaurants around the country, a trend noted by major food industry publications and bloggers. He is a native Philadelphian, growing up in the Northeast section of the city, where he spent many hours in his parents’ first restaurant, Piazza Pizza and then assisting at J. Cabot Catering in Center City, Philadelphia.

TreVi BYOB’s patrons enjoy a full menu of Italian, casual fare dishes that incorporate the chef’s award-winning, fresh tomato sauce and, as is often said, the best pizza in Glenside.

TreVi BYOB is a part of Burke Enterprises, which also operates TreVi Catering and J. Cabot Catering. Owners Joe and Gina Burke have been restaurateurs for over 30 years, having owned and operated restaurants and catering services in the Philadelphia area since 1985.

TreVi BYOB recently celebrated its fifth anniversary at 21 E. Glenside Avenue, in Glenside, PA. Many patrons recognize the location as the former Rizzo’s, a long-time and legendary Glenside eatery. Since taking over the spot, TreVi BYOB has become an integral part of the Glenside community with leadership roles in the Downtown Glenside Community Partnership and the Downtown Glenside Foundation.
