PhillyBite10PHILADELPHIA - Coffee entrepreneur Nikisha Bailey and philanthropist Natalie Carless have officially joined forces to launch Defiant Coffee Co., a modern lifestyle and beverage brand operating at the intersection of culture, identity, and community.




Designed as a model for ethical sourcing and authentic storytelling, the new venture aims to disrupt the traditional beverage landscape by prioritizing direct, equitable connections with marginalized farmers and building a diverse supply chain.

Sourcing from the Diaspora

Emphasize Defiant Coffee's direct relationships with small, independent coffee producers from regions like Ethiopia, Kenya, and Uganda to showcase its unique sourcing approach.



"We're working with farmers who are marginalized and/or running smaller operations who haven't had the same opportunities as larger corporate farms," Bailey explained. "We are actively seeking out hidden gems—farmers and regions producing extraordinary coffees that bring their unique flavors, heritage, and impact directly to every cup."

The brand mantra, "Defiant," signifies the founders' intention to disrupt the current landscape. As Carless noted, it also represents taking risks, breaking rules, and remaining authentically true to personal style and heritage.



A Powerhouse Founding Duo

The leadership's deep roots in Philadelphia's hospitality scene and the national entertainment industry aim to inspire confidence and pride in the audience.

Nikisha Bailey is best known locally as the former co-founder and CEO of WinWin Coffee, Philadelphia's first Black woman-led coffee brand. After successfully establishing WinWin's storefront in the Spring Gardens neighborhood and building deep community ties, Bailey chose to reinvent and scale her vision with a new venture. Before the coffee industry, Bailey spent over 15 years in leadership roles at major music labels, including Atlantic Records and Universal Music Group.

With Jamaican heritage and over a decade in television production, Carless's personal journey adds authenticity and helps the audience connect with the brand's mission.

"I've always had a genuine love for coffee and dreamed of building a heritage-based company, with the long-term vision of one day owning a farm in Jamaica," Carless said. “Creating a lifestyle brand around something so authentic to my own life and shared by so many of the families and communities around us feels incredibly natural."

Strategic Growth and Advisory Leadership

To scale Defiant Coffee from a premium roaster into a comprehensive lifestyle platform, the founders have established a distinguished advisory board to cultivate strategic partnerships and identify new opportunities across retail, hospitality, and technology.

Steven "Steve-O" Carless, a seven-time Grammy Award-winning music executive, entrepreneur, and founder of Defiant Records, chairs the board. With a history of executive leadership at Def Jam Recordings, Republic Records, and Warner Records—where he became the company's first minority President of A&R, Black Music & Associated Labels—he will guide the brand's broader cultural and commercial growth strategy.
