PHILADELPHIA - On November 1, 2026, the Baja-inspired taqueria owned by James Beard Award winner and Iron Chef Jose Garces will officially enter the morning game. Buena Onda's Fairmount location is launching a brand-new daily breakfast service designed to give neighborhood commuters and residents a fast, high-quality start to their day.
The new launch comes with a catch. The breakfast service is rolling out as a limited-time, 60-day trial running through the end of the year. The restaurant is calling on locals to help "save breakfast," putting the future of the morning menu entirely in the hands of consumer demand.
"Breakfast should be something you look forward to, even when you only have a few minutes," says Chef Jose Garces. "We wanted to bring the same bold flavors and quality people expect from Buena Onda to the morning. We're giving it 60 days and putting the decision in our guests' hands. If Fairmount wants breakfast, we'll keep making it.”
The Baja-Inspired Morning Menu
The new morning program runs daily from 7:00 a.m. to 11:00 AM and translates the brand's signature bold flavors into hearty morning staples. The menu includes:
- Bacon Jalapeño Breakfast Taco: Flour tortillas packed with scrambled eggs, smoked bacon, jalapeños, queso Oaxaca, and scallions.
- Chorizo Breakfast Taco: Scrambled eggs, Mexican chorizo, salsa Mexicana, avocado, and crema.
- Egg & Cheese Tacodilla: A simple, satisfying blend of scrambled eggs and queso in a flour tortilla.
- Oaxaca Breakfast Burrito: An extra-large toasted tortilla filled with scrambled eggs, breakfast potatoes, avocado, queso Oaxaca, and salsa Mexicana.
- California Breakfast Burrito: An extra-large toasted tortilla loaded with scrambled eggs, breakfast potatoes, queso Oaxaca, and avocado.
- Breakfast Bowl: A base of crispy fried breakfast potatoes topped with two fried eggs, black beans, queso fresco, peppers, onions, avocado, and salsa Mexicana.
To wash it down, Buena Onda is partnering with local favorite Rival Bros to pour drip coffee and cold brew, enhanced by a selection of house-made sweeteners.

To kick off the launch, Buena Onda is offering a free small Rival Bros drip coffee with the purchase of any breakfast item during the first week of service.
Buena Onda is located at 1901 Callowhill St. in the Fairmount neighborhood. After the breakfast window closes at 11:00 a.m., the restaurant will seamlessly transition to its regular all-day menu of tacos, bowls, and margaritas until 8:00 p.m.
