    • Fresh cilantro, chopped, for garnish (optional)
  • For the Marinade:
    • 1 bottle (approx. 17 oz) Coconut Pineapple flavored sparkling water (like Sparkling Ice) or equivalent amount of pineapple/coconut juice blend
    • ½ cup olive oil
    • 2 teaspoons harissa paste (or substitute Sriracha or other chili paste for heat)
    • ½ teaspoon salt
    • 2 teaspoons dried oregano (optional, adds depth)
    • 2 teaspoons ground cumin (optional, adds warmth)
    • 2 teaspoons cracked black pepper (optional)
    • 2 tablespoons chopped garlic (optional)
  • Special Equipment:
    • Approx. 16 Wooden skewers (or metal skewers)

Instructions:



  1. Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
  2. Prepare Marinade: In a large shallow baking dish or bowl, whisk together the coconut pineapple sparkling water (or juice), olive oil, harissa paste, and salt (and optional oregano, cumin, pepper, garlic if using).
  3. Reserve Marinade: Set aside approximately 1/3 cup of the marinade in a separate small bowl. This will be used for basting safely later or as a dipping sauce.
