PhillyBite10Philadelphia, PA - In this new, unconventional take on the traditional cheese dog, the natural, tart lemon flavor from mike’s hard lemonade perfectly complements the smooth, mild taste of melted cheddar cheese. Pair with mike’s hard lemonade for a burst of flavor that’s perfect for a refreshing break between bites. Serves 4

 

CHEESE SAUCE

Ingredients:
• ¼ cup unsalted butter
• ¼ cup all-purpose flour
• ½ ea Spanish onion, minced
• 2 ea garlic cloves, minced
• 6 oz. mikes hard lemonade
• ½ cup milk
• 1 cup heavy cream
• 1 tsp. hot sauce
• 1 tsp. dijon mustard
• 1 cup shredded cheddar cheese

Directions:
1. Melt butter, sweet onion and garlic, add the flour and cook until lite brown
2. Add the lemonade and reduce it by half. Add milk, let simmer
3. Take off the stove and use a hand wand and add the cheese a little at a time until all the cheese is added
4. Strain and set aside until ready to use. Store in a warm spot



SEASONING

Ingredients:
• 1 tbsp. paprika
• 1 tsp. cayenne
• 1 tsp. onion powder
• 1 tsp. garlic powder
• 1 tbsp. salt
• 1 tsp. sugar
• 1 cup flour



Directions:
1. Mix all the ingredients and set them aside

CRISPY SHALLOTS & CRISPY JALAPEÑOS

Ingredients:
• 6 ea shallots
• 4 ea jalapeños

Directions:
1. For the crispy shallots, peel the shallots and slice them thin on a slicer. Dust well with seasoning mix and fry at 325o until golden brown. Set aside until needed
2. For the crispy jalapeños, slice the jalapeños thin on a slicer, dust well with seasoning mix, and fry at 325o until golden brown. Set aside until needed

HOT DOG

Ingredients:
• 4 beef hot dogs
• 1 tsp. coriander seeds
• 1 tsp. mustard seeds
• 2 ea bay leaves
• 4 potato rolls

Directions:
1. Heat the hot dogs in 5 cups of warm water with the spices for 10 minutes
2. Take a room temperature potato roll and place one hot dog into the roll
3. Top the hot dog with about 2 tablespoons of the cheese sauce
4. Top the cheese sauce with a bunch of the crispy shallots and a few pieces of the crispy jalapeños
