Philadelphia, PA—(JANUARY 20th, 2016) BRICK AND MORTAR, the stylish new restaurant and bar in Philly’s burgeoning Loft District, is officially celebrating Robert Burns with traditional Scottish fare prepared by Executive Chef Brian Ricci. Burns Night is celebrated on or around January 25th to commemorate the life of poet (or Bard as the Scot’s put it) Robert Burns and his contribution to Scottish culture.
Ricci’s kitchen will boast a selection of special cheeses including Isle of Mull Cheddar – walnut chutney + barley malt $5, Haggis Bundles, Neeps & Tatties – lamb heart + lamb liver + scotch + turnip + potato $15, Beer Battered Fish & Chips – Atlantic cod + lefthand black jack porter batter + fries $19, Bannock Buns – barley flour pancakes + house cured salmon + dill + sour cream $7, and Deep Fried Candy Bars – $5. Available now while supplies last.
BRICK and MORTAR patrons will also enjoy a classic Bobby Burns cocktail from Lead Bartender Christina Rando – which features The Famous Grouse Blended Scotch + Sweet Vermouth + Benedictine for $7.
On Thursday January 21st there will be a traditional ceremonial address of the Haggis with a reading of Robert Burns’ classic poem on Thursday at 7pm by local Scotsman, Clayton Ames.

Brian Ricci grew up in Northern New Jersey. Following high school, Ricci took a gap year as a cook in a local restaurant. After college, he worked in the non-profit arena, but soon found his way back into the kitchen in San Francisco as an artisan baker. He moved back to the East Coast for culinary school where he attended the French Culinary Institute in New York City, graduating with high honors. Ricci worked under Chef Floyd Cardoz at Tabla in New York City (a restaurant that used French and Indian techniques). At Tabla, Ricci worked through the entire kitchen over a two-year span. After moving to Philadelphia, Ricci worked at Django, Supper, and opened Pub and Kitchen as Sous Chef to Jonathan Adams. Ricci took time off after his first son was born but returned to work to open Kennett as Executive Chef (Nov. 2010), with a keen eye for sustainability and responsible sourcing practices. While at Kennett, the restaurant earned nods from Esquire and Travel & Leisure. Ricci has a line of condiments (Nifty Spreads) available at Green Aisle, Fair Food, Elixr Coffee, Greensgrow. He lives in Philadelphia with his wife and two young sons.
