PhillyBite10Despite the advent of gourmet hamburgers, 74 percent of Americans believe the basic cheeseburger best embodies the classic All-American Hamburger. But for the rest of us, we enjoy our burgers spiced up like this easy-to-make Bleu Cheese Burger.

Blue Cheese Burger Ingredients

  • Four tablespoons cold pressed sesame oil, divided
  • Two medium yellow onions, thinly sliced
  • 8-10 ounces grass-fed ground beef, divided
  • Two tablespoons of pastured cream or milk
  • One tablespoon of aged balsamic vinegar
  • One tablespoon tomato sauce or gluten and soy-free Worcestershire sauce
  • 1/4 teaspoon sea salt and a twist of pepper
  • Four large leaves of red-leaf butter lettuce
  • 4 ounces raw cow’s milk bleu cheese (certified gluten-free)*
  • Burger garnished with one garden tomato, thickly sliced.

Instructions



Heat two tablespoons of sesame oil in a heavy-bottomed skillet and slowly caramelize the onion slices until brown and creamy.

Combine the ground beef, caramelized onions (reserving ¾ of the onions for garnishing the finished burgers), cream, balsamic vinegar, and ketchup. Season with salt and a couple of twists of pepper and mix well. Divide the mixture into two balls and form about 3/4-inch thick patties.



Heat the remaining two tablespoons of sesame oil over medium-high heat and brown the burgers for 1–2 minutes on each side in a heavy-bottomed skillet. Rare is good.
