Each of the three restaurants has a unique look and feel that transports guests to either a Japanese streetscape, seafront coastal town, and beachside beer bar,” detailed Chef Jose Garces. “We look forward to debuting these unique concepts in Tropicana while bringing our passion for our family-inspired traditions and hospitality back to Atlantic City.”
Chef Jose Garces - Ecuadorean by heritage, Garces has built a pan-Latin empire from his Philadelphia home base, growing from humble beginnings into a premier chef with 16 restaurants across three states, plus the District of Columbia. After growing up in Chicago and cooking in both Spain and the U.S., Garces landed in Philly in 2001. He opened Amada, his flagship Andalusian tapas restaurant in Old City, just four years later. Steady expansion, along with several hit cookbooks, a role on Food Network’s “Iron Chef America” and a Best Chef: Mid-Atlantic award from the James Beard Foundation would soon follow. These days, Garces splits his time between his many concepts; his Garces Foundation, which provides support and services to Philadelphia’s immigrant communities; Garces & Sons Coffee, where Chef Garces works with his father, who roasts all of the coffee; and Luna Farm, his 40-acre farm in Bucks County, Pennsylvania.
Olón - Inspired by the tranquil beach town of Olón, Ecuador and the vibrancy of coastal culture, Olón (pronounced Ō-lon) provides Tropicana guests with a classically alluring, laid-back experience centered around Chef Jose Garces’ vision of fresh seafood. Guests enter through custom-crafted Ecuadorian gates and first encounter a 43-seat ceviche bar and lounge, where they can watch chefs prepare ceviche and other raw seafood specialties. See More... Okatshe - Okatshe (pronounced Ō- kaht-she) is Chef Jose Garces’ playful, modernized take on a traditional Japanese izakaya. Okatshe visually transports guests to the streets of Tokyo and provides a sense of discovery by taking guests through a small Japanese candy (okashi) storefront before entering the restaurant. Bar Olón - Bar Olón is the interactive, 60-seat double-sided bar and lounge located between the two restaurants. Featuring a large, walk-around bar, the setting includes a modernized beach vibe with a combination of varying seating types to accommodate individuals and small groups. Vintage looking fans provide a cool, “ocean” breeze with whimsical bongos and neon signage completing the nostalgic vibe. An elevated platform with tropical mural wall-hanging backdrop will serve as a stage for live entertainment.
Chef Jose Garces’ Newest Ecuadorian Seafood Experience Olón - Located on the beach side of the Tropicana in Atlantic City, is where you’ll find Chef Jose Garce’s newest 128 seat Ecuadorian inspired seafood restaurant offering his traditional family recipes. While the food and service are outstanding as expected, Olón is unlike any other Garces’ restaurant you’ve previously been to. With picturesque views of the Atlantic City shoreline visible from every table, you will be engulfed in the beach-like atmosphere throughout your entire dining experience.
