Philadelphia, PA- St Petersburg Doughnuts: in Russian, these tasty treats are called pyshki. They are inexpensive and eaten daily by all. There is, in fact, a cafe that serves pyshki in St Petersburg since 1960 on Bolshaya Konyushennaya street, in the center of the city. The cafe still uses an old-time soviet recipe and antique machines for pyshkas-making. In the sprite of the St Petersburg Pyshki's and its tradition of making a dam good doughnut, we are sharing this recipe classic pyshki recipe below.
St Petersburg Doughnuts
Ingredients:
17.5 oz (500 g) flour
2 cup of warm water
2 tsp yeast
3.5 oz (100 g) + 1 tsp sugar
Two egg
3.5 oz (100 g) butter, or margarine, melted
Two egg
1 cup of sugar powder
2 cup vegetable oil for frying
Instructions:
- Stir 5.2 oz (150 g) a flour, yeasts, 1 tsp sugar, and 2 cups warm water thoroughly.
- Cover a batter with a piece of a plastic wrap, and set in a warm place for 20 minutes.
- Then, add all other ingredients but a sugar powder, stir well, and set in a warm place for 2 hours.
- Make pyshki like donuts, and cook in boiling vegetable oil until their color starts to change.
- Place on a flat dish, sprinkle with sugar powder, and serve with a coffee.
